Homemade Guacamole

Guacamole is always a crowd pleaser and as summer is here, and so are the summer parties and picnic dates, this recipe is definitely one to add to your menu! Back home we always make guacamole in a pestle and mortar but if you have a fork and bowl, that works too! So, go and buy the best avocado you can find because you haven’t tried guacamole until you’ve tried homemade guacamole!

Guacamole
Serves: 2
Prep: 7 min
Total time: 7 min

Tip: For a spicy kick add a little bit of jalapeño

1 Avocado
1 tomato diced
1 lime
1/4 onion diced
1 small bunch coriander (cilantro) finely sliced
Salt to taste

Step 1: Cut avocado in half and scoop out filling into mortar. Mash the avocado with pestle leaving some bits chunky. (If you do not have a pestle and mortar you can scoop filling into bowl and use a fork tip to create a similar consistency)
Step 2: Squeeze lime juice, onion, tomato and coriander into mortar and with a spoon mix together until all is evenly distributed. Season with salt (I normally add just a small pinch as most tortilla chips already have salt and it’s a nice balance)

Have fun! And let me know how you get on
