I was recently looking through old recipes when I came across a easy chocolate mousse recipe which inspired me to create my favourite childhood hot chocolate. I grew up with Abuelita hot chocolate (I’m sure every Mexican knows what I’m talking about) and in my opinion, nothing compares. Abuelita is made of pure cocoa, cinnamon and sugar. Basically, it’s amazing and why not have it for pudding?! So here’s a super easy and delicious treat! Hope you enjoy it as much as I did!

Prep Time: 10 min
Cook: chill for 2 hours
Ingredients
120g dark chocolate (65% cocoa), roughly chopped
50g light brown soft sugar
1 teaspoon vanilla
1 teaspoon cinnamon
4 eggs separated
1 orange zest
pinch of sea salt
Recipe
Step 1- In a heatproof bowl, melt chocolate by heating in microwave for 1 minute. If chocolate doesn’t completely melt, heat for another 30 seconds. Leave aside to cool
Step 2- With an electric beater, whisk eggs till they become white and fluffy. Add sugar and beat until egg whites turn glossy
Step 3- Stir cinnamon, vanilla, pinch of salt, and egg yolks into cooled chocolate and mix well. Pour chocolate mixture into egg whites and fold gently to combine. Don’t over-mix.
Step 4- Pour into small glasses or dessert cups. Add orange zest on top and chill for 2 hours.
