Esli’s Arbol Salsa Grilled Chicken

Grilled chicken is everywhere right now – and we know why – it’s so simple, tasty and healthy! Why not try this gorgeous Mexican inspired grilled chicken. It’s really straightforward and so, so delicious! Perfect for the summer nights that are just around the corner – give it a try!

Esli’s Arbol Salsa Grilled Chicken

Serves: 4
Prep Time: 15 min
Cook Time: 1 hr and 15 min

1 whole Chicken
2 tablespoon of crushed de arbol chillies (alternative crushed chilli pepper)
1 teaspoon salt
2 garlic cloves
1/2 cup olive oil
1 lemon juice
1 small bunch of coriander (approx. 28 g)

Step 1-  Cut out a piece of Aluminium Foil (approx. 10 inches long). In the centre of the foil add crushed de arbol chillies and wrap the chilli tightly in the foil.

Step 2- With metal tongs hold the chilli over a small flame being careful not to touch the flame or else the foil will burn through. Keep turning the chili to evenly toast for about 1 min (Turn on your extractor fan to help with the smoke). If the foil catches on fire lift it up away from the flame so the fire dies down. You can still use the chilli.

*If you don’t have a gas hob you can do this on a grill outside

Step 3- In a blender add toasted chilli, coriander, garlic, olive oil, salt, and lemon and blend until a smooth salsa. (Pour a bit into a separate ramekin so you can pour over your chicken at the end). Put the salsa aside until your chicken is prepared for marinating.
Step 4- Preheat your grill to 200 C. With kitchen scissors spatchcock your chicken. Don’t get nervous by the name of this cut, it’s really easy to do and will help your chicken cook faster. Spatchcock means to take out the backbone of the chicken and flattening it so it can cook quicker and evenly. I’ve inserted a clipping from a waitrose magazine that helps explain. Metal skewers help hold your chicken together but it’s optional

Step 5- Once your chicken is ready to marinate place it on the grill plan. Brush both the top and bottom side with your salsa and put inside the oven to grill with the door half open for 1 hour and 15 min.
Step 6- For best results, flip your chicken every 20 minutes and brush with more salsa for flavour.
