Lentejas con papa (Lentils with potato) 

It’s the start of new year. For many of us it brings an encouragement to be better and renewed hope to accomplish goals we lost focus on the year before. 2016 was my first year of being a wife, living in a new country, starting new relationships, and learning to find joy in the unfamiliar.

2016 was a very formative year for me, one that I would not change for anything, even if at times I felt completely out of place. I have realized that I am braver than I knew and that, in the midst of so much change, finding space to thank God for His faithfulness is important.

2017 is the year I hope to settle more into who Esli is in England and a year where I learn to make a crumble (let’s just say my last crumble looked like a large shortbread cookie on top of mixed berries!). Although 2016 has been full of change there has always been the comfort of mom’s recipes; without fail, mum’s recipes always put a smile on my face.

Lentils with potato might sound plain, but it’s one of my favorites – I hope you like it too! This dish is not only super easy to make, but it is full of flavor and perfect for the cold winter evenings.

Lentejas con Papa
Serves 6

Prep time: 10 minutes
Cooking time: 45 min
Total time: 55 min

1 cup green lentils
5 small baby potatoes
3 carrots
2 tablespoon olive oil
2 large garlic cloves, minced
1 small onion, minced
2 tomatoes, diced
1/2 tablespoon paprika
salt and pepper to taste
1 1/2 chicken stock cubes (Veggie stock if vegetarian)
1.5 liter boiling water
3 limes
1 small bunch coriander

Serve with: rice 

  1. Heat olive oil in a deep pot on low heat and add in garlic, tomato, onion, paprika, and chicken stock. Keep stirring to avoid burning until onions are transparent and tomatoes have completely softened. This is key to the flavor. (Approximately 8 min with continuous stirring)
  2. Once your first step is done, add in lentils, carrots, and potatoes. Stir for 30 second.
  3. Cover with boiling water, raise to medium heat and cover pot. Cook for 15 minutes and stir.
  4. Cook for 30 minutes more
  5. Serve your lentils with coriander on top and squeeze fresh lime
